High Protein Lemon Blueberry Muffins

A protein balanced diet is critical to your long-term health.  Did you know that outside of water, the majority of the human body is comprised of protein?  The bones, muscles, skin, hair, nails and internal organs are protein as are the enzymes which influence every function of the body.

The immune system demands a constant supply of dietary protein to build new cells in order to fight infection.  Inadequate quantity and quality of protein results in the classic signs of protein deficiency:  water retention,  a suppressed immune system, poor muscle development, hair loss and lack of energy.

Every age group and every physical condition has its own unique demand for protein, for example children need protein for physical development of their bodily systems; athletes need extra protein to repair damaged muscles; those who are sick require protein for the production of white blood cells and the elderly require protein to maintain the strength, energy and health of their bones!

Since its not always easy to consume enough protein, we’re all about helping you find different ways to add good quality protein to your diet to boost your overall health!  Here’s a delicious high protein lemon blueberry muffin recipe, which makes for a perfect snack between meals.  The recipe is inspired by bodybuilding.com.

High Protein Lemon Blueberry Muffins

In one bowl, mix together:

1 cup Xcell Power Protein powder or 3 scoops of our Xcell Re Build
3/4 cup flour
1 package vanilla or cheescake Simply Delish sugar free pudding mix
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon

In a seperate bowl, mix together:

1 cup blueberries
3 egg whites
1/4 cup milk (look at our dairy-free milk options here)
1/4 cup apple butter (or applesauce)

  1. Preheat oven to 180 degrees celius. Pour the first batch into the second, little by little, mixing well.
  2. You should also add some water a little bit at a time until the batter becomes liquidy enough.
  3. Pour that into cupcake molds and pop it in the oven for 15 minutes. They’re done when a knife inserted comes out clean. This also makes a great loaf of bread if you’d prefer to do that. This recipe makes 8 muffins.
